The Most Anticipated New Restaurants Opening in Las Vegas, Fall 2015

Details on every big opening coming to Las Vegas this fall.

The biggest restaurant openings of the year are right around the corner as fall gets ready to blossom. Mega-restaurants such as Carbone come to Aria and Rivea from Alain Ducasse with his neighboring Skyfall Lounge open at Delano. Much-anticipated Pawn Plaza from Rick Harrison of Pawn Stars brings Smoke’s Poutinerie and Harrison’s collaboration of a barbecue restaurant. Smaller restaurants such as The Smashed Pig, Chow, Le Pho and Harvest & Larder are on the agenda as well. And brace, the world’s largest Hooters unleashes the breastaurant on the Palms. Red Rock Resort lands a new Italian restaurant, and Downtown Summerlin goes Mexican. Here, a look at the most-anticipated restaurant openings of fall 2015 in Las Vegas.

The Players: Mario Carbone, Rich Torrisi, Jeff Zalaznick 


The Situation: Carbone makes its Las Vegas debut, taking over the former home of Sirio Ristorante from the legendary Maccioni restaurateurs. Carbone is about theatricality — waiters in burgundy velvet Zac Posen blazers, piped-in mood music, tableside service — and a reverence for the captain style of dining more popular in the middle on the 20th century. And it will be huge at 10,300 square feet.

Rivea and Skyfall Lounge

Location: Delano

The Players: Alain Ducasse

The Situation: Michelin-starred chef Alain Ducasse is bringing a $2.8 million blockbuster to the Strip with Rivea and its neighboring 007-sounding Skyfall Lounge. Executive chef Bruno Riou plans to serve fare influenced by Provence and Italy including house-made pizzettes, pastas, and grilled dishes. Skyfall Lounge with its views of the Strip from the 64 floor of the Delano plans multiple levels, an outdoor patio and "seating islands" around a dance floor. Rivea will be doing the food here, with smaller bites such as tigelle sandwiches and squid fritters promised.

Salute Trattoria Italiana

Location: Red Rock Resort

The Players: Andy Masi and his new Clique Hospitality with chef Luciano Sautto

The Situation: Executive chef Luciano Sautto brings a 4,000-square-foot room to the former Terra Rossa space at the front of the resort. At the front, an indoor/outdoor patio with a bar with glass panels that slide open and closed to the patio area. Next to that, the private dining room with space for 12 has its own entrance onto the patio with room for 60. An exhibition kitchen features a pizza oven wrapped in tile and imported Italian white marble swaddles the kitchen and front entrance. At the front, find an antipasta bar that guests at the resort can see from the entrance. Sautto says the restaurant will serve gelatos and handmade waffle cones there. The dining room itself as room for 189 with exposed wood on the ceilings and travertine and wood floors. Banquettes sit in front of the kitchen.

The Smashed Pig

The Players: Husband and wife chef team Martin Swift and Linda Rodriguez

The Situation: Swift and Rodriguez worked at Nobu and Hachi, but The Smashed Pig will be all about British fare, a tip to Swift's heritage. U.K. pub staples like pasties and pies have been promised, plus a Christmas-time favorite, a fruity mincemeat pie. Construction was on pause for a while.

Le Pho

Address: The Juhl, 353 E. Bonneville Ave.

The Players: District One Kitchen & Bar executive chef Khai Vu

The Situation: Khai Vu's sophomore effort brings Vietnamese fare to The Juhl. Chef Vu has already hinted at menu possibilities including banh cuon, "steamed rice roll stuffed with ground pork, wood ear mushroom and shallot," banh mi op la, created with a "baguette, pâté, eggs, fresh cut veggies" and pho ga, a Vietnamese chicken noodle soup. The early start might also allow for his twist on an omelet or soft boiled egg and oxtail rice as a breakfast dish.

The Players: Sheridan Su and Jenny Wong of Fat Choy

The Situation: The owners of Fat Choy are opening a chicken restaurant on Sahara Avenue, right down from their original restaurant inside the Eureka Casino. They're building the site out from scratch, and based on their Instagram posts, the space requires a lot of work. Almost everything here so far rings in under $10. Look for Hainanese chicken rice from China made with free-range chicken, up to two pounds of chicken wings with sauces such as Pok Pok style, Buffalo style or just straight up Chinese salt and pepper and snacks such as chicken skin or egg waffles. The Players: Natalie Young of Eat

The Situation: Branded "the Chicken and Chinese Joint" and located next door to Downtown's recently debuted bookstore The Writer's Block, Chow will occupy 2,278 square feet with 67 square feet of patio. Chef Young promises "Southern-style soul food with fine Chinese cuisine," and all eyes are on her much-anticipated spin on Southern fried chicken.

Harvest & Larder

Harvest & Larder and Grazing Pig Charcuterie

Address: 1130 S. Casino Center Blvd.

The Players: Brian Howard, formerly of Comme Ça, and Corey Nyman of partner and founder of boutique winery Labor Wines

The Situation: Their ground floor, 4,530-square-foot space will be home to both the counter service Grazing Pig Charcuterie and full-service restaurant, Harvest & Larder — Honest American Cookery & Libations. They will be sharing a kitchen and creating an urban lounge for the area between the two ventures. Asbestos is hampering construction.

Address: The Palms

The Situation: Get ready for the breastaurant Hooters debuting its largest location yet in the former Heraea space. The more than 15,200-square-foot space sits next to the Palms Pool and plans to seat more than 500 guests, claiming the title of world’s largest Hooters. The large poolside bar opened in June, and the two-story main dining room inside Palms has yet to be revealed.

The Situation: Rick Harrison of Pawn Stars fame is building a container park Pawn Plaza bringing the very first Smoke's Poutinerie to Las Vegas. Rita's Water Ice, Inna Gadda di Pizza, Pawn Donut & Coffee and Rick’s Rollin Smoke BBQ & Tavern, from Harrison and Rollin Smoke BBQ are also on tap. Harrison plans to be behind the bar at the second-floor tavern on Fridays and Saturdays, but make your drink orders simple.

The Players: Hakkasan Group and Brian Malarkey with Geno Bernardo in the kitchen

The Situation: Gold Boutique Nightclub & Lounge converts into Herribone, the  "fish meats field" restaurant from Brian Malarkey. A new bar, exterior patio and 91-square-foot decorative water feature are on the design agenda, while former Nove Italiano chef Geno Bernardo was tapped to run the kitchen, cooking skate wing schnitzel with spätzle, sea beans, Hen of the Woods mushrooms and mustard jus and a roasted Colorado lamb rack with squash, corn, basil, piquillos, padrons and harissa aioli.

Pancho's Mexican Restaurant

Address: Downtown Summerlin

The Situation: In California, Pancho's is known as a "festive spot for Mexican food and drinks" and also for its jam packed interior decor, with small fountains on their patio, twelve foot tall doors "salvaged from a castle in Spain" and a "wrought iron sculpture of famous bandido, Emiliano Zapata." The two-story interior features balcony seating looking down on the main dining area. Already previewed, stained glass windows, arched doorways and hand-painted ceramic tiles.
