Skinny Garlic Cheese Cauliflower Bake

Confession: I am a little addicted to garlic cheese fingers. In case you don’t know what that is, it’s pizza dough topped with garlic spread and loaded with cheese. Oh. my. gosh. It is SO good!

In an effort to find a healthier alternative I replaced the pizza dough with cauliflower and this Skinny Garlic Cheese Cauliflower Bake was born! It’s SO much healthier and an extra serving of veggies is always welcome in my diet.

The first time I made this, the pan was gone so quickly. I was pleasantly surprised that my whole family liked it… Even my little brother, who really hates cauliflower! This recipe is a quick and easy way to add an extra serving of veggies to lasagne or spaghetti night.

Skinny Garlic Cheese Cauliflower Bake
Ingredients
  • 1 Head of Cauliflower
  • 3 Tablespoons of Garlic Butter
  • 1 cup of Shredded cheese
Instructions
  1. Preheat oven to 350 degrees.
  2. Cut up cauliflower into bite sized pieces and rinse well.
  3. Melt Garlic Butter.
  4. Dip cauliflower pieces into the garlic butter, making sure to fully coat them. Let them drip off the access garlic butter before placing in the pan
  5. Once all cauliflower has been coated with garlic butter and placed in the pan, spread cheese evenly over cauliflower.
  6. Bake for 20-25 minutes, or until cheese is fully melted.
