Nikuman (肉まん) are sweet, steamed dumplings filled with seasoned pork and vegetables. Experimenting with flavors and fillings is encouraged!

How to Make Nikumans

— Ingredients —

flour
2 1/2 cups flour
baking powder
4 tsp baking powder
(or 2 tsp instant yeast)
sugar
3 tbsp + 1 tsp sugar sugar
milk
2/3 cup milk
(warm)
ground pork
5 oz. ground pork
garlic clove
1 garlic clove
(minced)
green onions
3 green onions
(minced)
shiitake mushrooms
3 shiitake mushrooms
(minced)
ginger
2 tsp ginger
(minced)
sake
1 tbsp sake
soy sauce
2 tsp soy sauce
sesame oil
2 tsp sesame oil

— Instructions —

  1. In a large bowl, combine warmed milk, baking powder (or yeast), and 3 tablespoons of the sugar.
  2. Gradually, add flour to the mixture. If too sticky, add more flour until workable.
  3. On a floured surface, knead the dough until smooth and elastic (about 15 minutes).
  4. Allow the dough to rest (about 30 minutes).
  5. While waiting, make filling by combining the remaining ingredients in a separate bowl, and mixing until sticky.
  6. Flatten a quarter-sized ball of dough using a rolling pin, fill with meat mixture, and pinch to close. Repeat with remaining dough and meat.
  7. Steam the buns (about 15 minutes), and serve hot.
