Strawberry Dessert Nachos
Ingredients:
whole wheat cinnamon-sugar tortilla chips
2 cups California strawberries
1 cup blueberries
drizzled chocolate
dollop of whipped cream (optional)
Directions:
On your serving dish place a layer of whole wheat cinnamon-sugar tortilla chips. Then sprinkle strawberries and blueberries on top, then add another layer of chips and continue until you have used all berries. Drizzle the melted chocolate on top of the nachos. You can add a dollop of whipped cream to the top.
Whole Wheat Cinnamon-Sugar Tortilla Chips
Ingredients:
3 medium whole wheat flour tortillas
2 Tablespoons unsalted butter
1/3 cup sugar
2 teaspoons cinnamon
Directions:
Preheat oven to 350 degrees. Spray 2 large baking sheets with non-stick spray. Cut tortillas into 8 triangles using a pizza cutter. Mix the cinnamon and sugar in a bowl. Using a brush, lightly brush melted butter onto both sides of the sliced tortillas and then toss the tortillas with the mixture of cinnamon and sugar. Place in a single layer on baking sheet. Bake for about 5 minutes on each side until desired consistency.
Chocolate Sauce
Ingredients:
1/3 cup semi-sweet chocolate chips
Directions:
Melt the chips in a glass bowl in the microwave for about 1 minute watching carefully and stirring occasionally.
Greek Yogurt Covered California Strawberries
Ingredients:
6 California strawberries
1/2 cup nonfat Greek Vanilla Yogurt
Wax paper
Directions:
Place a piece of wax paper on countertop. Put the Greek yogurt in a wide bowl. Slice off tops of strawberries and make sure they are dry. Then twist each strawberry in a circle to create a smooth, evenly distributed coat of Greek yogurt on the strawberry. Place coated strawberries onto wax paper and place in freezer for about 2 hours.
Strawberry and Blackberry Kale Salad
Ingredients:
(2) 5 ounce grilled chicken breasts, sliced
1 pound Lacinto kale, rinsed, hard stems removed, tear or chop into bite-sized pieces
8 ounces California strawberries, rinsed, hulled and halved
4 ounces blackberries
2 Tablespoons Gorgonzola cheese
Dressing:
3 Tablespoons strawberry balsamic vinegar (can also use balsamic vinegar or red wine vinegar)
1 Tablespoon extra virgin olive oil
2 teaspoons honey
Directions:
Put kale into a large mixing bowl, set aside. In a small bowl, whisk together the vinegar, olive oil and honey. Pour dressing over kale and massage well, making sure the kale absorbs dressing. Add chicken breast, California strawberries, blackberries, and Gorgonzola. Serve immediately or chill for a few minutes.
