Celebrate Chinese New Year at 18 Reasons in this hands-on cooking class where you’ll learn to prepare Chinese-Peruvian Chifa dishes. Originally from the Canton region of China, these dishes have been popular in Lima’s Chinatown since the 1850’s. Tonight’s class is taught by our resident Peruvian chef Nico Vera, for whom Chifa is the comfort food of his childhood that is always best enjoyed family-style.

Sopa Wantan — chicken soup with pork dumplings, bok choy, ginger, soy sauce, and scallions
Tallarin Saltado — shrimp stir-fry with noodles, ginger, vegetables, tossed in a sweet & sour sauce, and drizzled with sesame oil
Arroz Chaufa — fried rice with chicken, almonds, eggs, ham, red pepper, pineapple, ginger, soy sauce, scallions, and cilantro
Sudado de Pescado — steamed fish with ginger, scallions, soy sauce, hot peppers, scallions, and cilantro
 
 
Born in Peru and based in San Francisco, California, Nico Vera is the founder, chef, mixologist, writer, and photographer for Pisco Trail. As the resident Peruvian chef at 18 Reasons since 2011, his pop-up dinners and classes are a gastronomical tour of Peru’s criollo cuisine and its unique culinary history.
