Chunky Tomato Salsa with Queso Fresco

Ingredients
- 1 1/2 c.
seeded, finely chopped red and yellow tomatoes (about 3 large plum tomatoes)
- 3/4 c.
cubed queso fresco
- 3 tbsp.
finely chopped red onion
- 2 tbsp.
capers, drained and coarsely chopped
- 1 tbsp.
extra-virgin olive oil
- 1 tsp.
fresh thyme, minced
Kosher salt and freshly ground pepper, to taste
Directions
- Step 1In a medium bowl, gently toss all ingredients to combine. Serve salsa chilled or at room temperature with crackers or chips, or as an accompaniment to grilled swordfish or chicken.
