Coconut Curry Lentil Soup with Turmeric

 This is the easiest Vegan Coconut curry lentil soup that you can make. With a handful of ingredients this delicious warming soup is ready in under 20 minutes. I love enjoying this warming soup on cool winter nights with a warm baguette. It is a balanced soup with protein, vegetables and fat that is as satisfying for the taste buds as it is for the hungry belly.

Loaded with benefits of warming spices like Turmeric and ginger and also healthy fats like coconut, this soup is soul satisfying and delicious. You will find yourself liking the bowl!

Serves: 4 (makes 1litre soup)

Ingredients:

1 Jar Good Food For Good Coconut Curry sauce (250ml)

1/2 Cup red lentils (rinsed)

1 Cup chopped carrots

1 Tbsp Ginger finely chopped

1 tsp salt

3 cups of Water

Method:

  1. Add all the ingredients to a soup pot and bring it to a boil
  2. Cover the pot and reduce heat to medium low and cook for 15 minutes
  3. Blend with a hand blender and serve

Chef’s Tip: Feel free to substitute carrots with squash or sweet potato.

  • Hi Ellen, The Coconut Curry sauce used in this recipe already has turmeric but you can always add a pinch of turmeric powder in step 1 of the recipe.
