When it comes to easy meals, Meatloaf is a go-to of mine. I love Meatloaf, but with that said, I am a self-admitted Meatloaf snob. I will not eat Meatloaf at restaurants and am very leery of trying it anywhere else. For a while, I would attempt to try it but honestly, there are some foul tasting Meatloaf recipes out there! I have been spoiled to this Easy Meatloaf Recipe with Oatmeal.
Our family loves this Easy Meatloaf Recipe made with Oatmeal. It is a nice change from using bread crumbs or crackers! It is quick and easy to mix up, then just stick in the oven. While it cooks, you can prepare your sides or fold that load of laundry that is waiting on you 🙂 I love recipes that you don’t have to hover over and fuss with! Easy Meatloaf Recipe with Oatmeal
Ingredients:
1 1/2 lbs. ground beef or chuck
1 cup Quick Cook Oats
1 envelope onion soup mix
1 egg, slightly beaten
1 small onion, chopped
8 oz. can tomato sauce
2 tsp salt, or to taste
1 tsp pepper, or to taste
Instructions:
Preheat oven to 350 degrees.
Add all ingredients into a large mixing bowl.
Stir until all ingredients are combined.
Spray a meatloaf pan with cooking spray. I prefer to use a glass meatloaf pan.
Add the meatloaf mixture into the meatloaf pan. Press down firmly and flatten with spoon or spatula.
Bake in a 350 degree oven for 1 hour.
Remove meatloaf from the oven and and cover the top with ketchup. Spread evenly with a spatula.
Place bake in oven and continue baking another 15-20 minutes.
Remove from oven and allow to stand for 10-15 minutes. Cut into slices or squares.
Serve with your favorite sides and enjoy!
