Noma in Japan: a look inside the new kitchen of the world’s best restaurant

In 2015, Noma had just been named the best restaurant in the world for the fourth time. It’s a prestigious title, but it came as no surprise considering the restaurant’s perfectly mastered dishes. “We started to slip into our comfort zone, decided we were in need of an adrenaline rush and decided to take an enormous risk together” explained Chef René Redzepi. It’s an ‘enormous risk’ in the form of a two month long pop-up in Tokyo, and deciding how to reproduce the Copenhagen restaurant in the heart of Japan. The starting point is the extraordinary creative adventure of a chef and his team, with Maurice Dekker’s film ‘Noma in Japan’ documenting their culinary adventure.
