Whether you’re trying out new recipes or trying to improve upon Nonna’s marinara recipe, there is a fine art to a great pasta dish. While this hugely popular Italian cuisine has become a staple of the American diet, the variations of pasta and what makes each recipe so unique can be intimidating to most amateur chefs. However, there are certain ingredients and preparation techniques that make a fantastic pasta dish, whether you choose to garnish with basil and olive oil or a more traditional bolognese. The devoted staff at Hope Pizza Restaurant in Stamford, CT, has been serving traditional pasta fare since they opened their doors in 1979. Below, they outline their tips and tricks for creating a great pasta dish.

Stick to the Basics

pastaStart by understanding the difference between fresh egg pasta and dried pasta. Fresh egg pasta is more tender and traditionally served with the butter, cream, and rich meat dishes of the North of Italy. Dried pasta will always pair better with the olive oil and tomato dishes of the South.

Always Cook Your Pasta Al Dente

Every great pasta dish is served al dente, or “to the bite.” Pasta that is cooked al dente is healthier and tastier, as it is absorbed more slowly than overcooked pasta. In order to avoid overcooking your pasta, test it in 15-20 second intervals about two minutes before you think it might be ready.

Never Drain All of the Pasta Water

Add about ¼ or ½ cup of pasta water to your sauce. The salty, starchy water will add flavor, thicken the sauce, and glue the pasta and sauce together.
