BUFFALO CHICKEN MEATBALLS

In the south, September is spelled F-O-O-T-B-A-L-L!  And, football games just aren't the same without wings.  This year put a twist on those messy wings with these fabulous Buffalo Chicken Meatballs. 

INGREDIENTS

1 pound of ground chicken
1/2 of one medium onion chopped
2 cloves of garlic grated or finely chopped
1 tablespoon of Lawry's Seasoning Salt or your favorite seasoning salt
1 egg
1/2 cup of plain breadcrumbs
3/4 Buffalo Style Hot Sauce
2 tablespoons of butter

DIRECTIONS

Heat oven to 400. Line a cookie sheet with parchment paper.

Mix everything except the Hot Sauce and the butter in a bowl. I use my hands to mix, but some people prefer a food processor.

I use a melon baller/cookie scoop to scoop the meat and roll into balls.
Bake for 10 - 13 minutes.  While meatballs are cooking, heat Hot Sauce and butter in a small saucepan. 

Once meatballs are done, place them in the saucepan to coat with sauce or you can leave it on the side. (Or you could even toss some in BBQ sauce for kids that don't like hot.)

Serve with Ranch or Blue Cheese dressing.
