Hey peeps, we'll make this email relatively quick and straightforward - here's what we've got on deck for this week:
  • Wednesday: Cans & Draft of Palapa of Your Dreams - 8% Yeast Driven Double IPA We re-engineered this brewpub one off to be fermented with two expressive yeast strains and a unique dry hop.
  • Wednesday: Cans & Draft of Vengeful Barbarian - 7.2% Yeast Driven IPA Fresh new batch! One our favorites brewed with expressive yeast.
  • Wednesday: Draft of Altbier - 5.4% This is a new, never before been brewed (by ASB) style that we're really excited about. In short, Altbier is a Northern German-style malt forward amber ale, native to the Dusseldorf area. We've used traditional German hops and employed a yeast that is historical to brewing these types of beers. It's crisp, malt forward (biscuity, light caramel) and has a moderate hop bitterness. We've captured all the CO2 naturally for a gorgeous head of foam and a creamy texture. A fantastic food companion!
  • Wednesday: Draft of New Haze, Who Dis? - 5.7% This is yeast driven pale ale dry hopped with Styrian (Slovenia) Cardinal hops and a hint of Mosaic.

What's On Tap This Week 5.21.18

NEW THIS WEEK

Vengeful Barbarian - 7.2%, Low Bitterness

Bright, peach heavy tones from an East Coast yeast strain fermentation and a dry hop that includes a bunch of our favorites. The result is a hop aroma and flavor chock full of ripe, juicy grapefruit and apricot jam. On the back end, we've loaded up with beer with lots of oats, so it has a soft, creamy texture to support mild hop bitterness.

Style: Yeast Driven IPA
Yeast: Delorean Blend
Malt: American 2-Row, Flaked Oats
Hops: Simcoe, Citra, Mosaic, Ekuanot

Palapa of Your Dreams - 8%, Low Bitterness

Ladies & Gentlemen....we just paid the Palapa contractor. The Palapa piper, so to speak. The dream is a reality. We will no longer be exposed...to the elements! This foggy juice has been built up with two expressive yeast strains for extra tropical vibes, and then reinforced with heavy additions of Blanc, Azacca, Idaho 7, Loral, and touch of Mosaic cryo.

Style: Yeast Driven Double IPA
Malt: American 2-Row, Flaked Oats, Malted Oats
Hops: Blanc, Azacca, Idaho 7, Loral, Mosaic Cryo

Altbier - 5.4%, Moderate Bitterness

Altbier is a Northern German-style malt forward amber ale, native to the Dusseldorf area. We've used traditional German hops and employed a yeast that is historical to brewing these types of beers. It's crisp, malt forward (biscuity, light caramel) and has a moderate hop bitterness. We've captured all the CO2 naturally for a gorgeous head of foam and a creamy texture. A fantastic food companion!

Style: Northern German Altbier
Malt: German Pilsner, Munich II, Caramel Wheat, Carafa II
Hops: Hallertau Blanc

New Haze Who Dis? - 5.7%, Low Bitterness

Fruity pale ale fermented with an expressive yeast strain and dry hopped with a citrus-forward Slovenian variety called Cardinal (with a small supporting role of Mosaic). Soft on the palate, great spicy food companion.

Malt: American 2-Row, Malted Oats, Flaked Oats
Hops: Styrian Cardinal, Mosaic

HOPPY

Root Bound - 8.1%, Low Bitterness

Backed by a blend of British Maris Otter and American 2-row barley, with additions of malted oats for a pillowy softness on the palate, this double IPA was fermented with an expressive yeast that augments tropical hop flavors of Mosaic, Citra & Enigma hops.

Minesweeper - 7%, Moderate Bitterness

 

Hop hazed and incredibly juicy, this was our first ever brewed IPA and remains our top selling beer and local favorite at our Monterey brewpub. It’s brewed with 100% British Maris Otter pale malt as it’s base, which contributes a creamy texture and a tad more body than your typical dry, West Coast IPA. As with most of our hoppy beers, a majority of the bitterness comes directly from whirlpool additions in the boil, with the intent of maximizing hop aroma & flavor. Minesweeper is dry hopped excessively with Simcoe and Citra hops.

Countach - 8.1%, 40 IBU

Exotic, sharply angled and engineered for maximum juice. This Double IPA has been fermented with an expressive yeast strain, resulting in flavors and aromas of nectarines and ripe pineapple. Dry hopped heavily with a unique pairing of American and Southern Hemisphere hops.

Hops: Citra, Mosaic, Vic Secret

Raw Cuts, 6.8% 30 IBU

Experimental IPA with three different yeast strains to produce bright, fruity flavors and a gorgeously luscious mouthfeel. Mosaic, Idaho 7 & Amarillo in the dry hop.

Malt: American 2-Row, Flaked Oats, Malted Oats
Hops: Mosaic, Idaho 7, Amarillo

Playa del Dauv - 10.5%, 50 IBU

From Martha's Vineyard to St. Barts, Party Wave Dave ("Dauv" in formal situations) cruises high society. A member of the landed gentry, he resides most of the year at his estate in Playa del Dauv. Part imaginary but part real, it is a place filled with daquiris, fidget spinners, vapes, disco balls, wave skis and enough cheap thrills to keep him thoroughly distracted but also very amused. All behind a soundtrack of Sade & Evelyn "Champagne" King. Savor this TIPA juice, and cheers to 4 years of drinking fresh and burping hops y'all!!

Style: Triple IPA
Malt: American 2-Row, Naked Oats, Malted Oats, Oregon Hard Red Wheat
Hops: Mosaic, Enigma, Vic Secret, El Dorado, Amarillo

Riot Punch - 8.5%, 40 IBU

New age double IPA that's heavily impacted by the bright peach & stonefruit notes imparted by an expressive yeast strain. Simple dry hop consisting mostly of Citra and a small portion of Azacca, resulting in a citrusy/tropical mélange of hop aroma and flavor; passion fruit, tangerine, pineapple, white wine-esque grape character. Alcohol is subdued, mouthfeel is full and soft, light bitterness.

Style: Double IPA
Malt: American 2-Row, Flaked White Wheat, Flaked Rye
Hops: Citra, Azacca, Hallertau Blanc, Idaho 7

Citraveza - 4.9%, 25 IBU

This is a hoppy Mexican lager inspired by a San Diego garage homebrew recipe from 2011. Bitterness is light and crisp, but hop aroma & flavor are front and center. We overuse the word "tropical", but there's really no better way to describe Citraveza, as the interaction between the lager yeast and these hops make for a truly unique, quenchable beer.

Pit Master Blaster - 6.4%, 35 IBU

Hazy IPA brewed with our good pals from Tank House BBQ in Sacramento! Expressive yeast strain for extra JUICE, hit hard with Citra & El Dorado hops. 

Style: Yeast Driven IPA
Malt: American 2-Row, Flaked Oats, Malted Oats
Hops: Citra, El Dorado

Imperial International-Style Juice - 8%, 40 IBU

Our follow up collaboration to International-style Juice brewed at Reuben’s in May 2017. This Imperial version presents all the glorious Mosaic, Citra & Amarillo oily goodness in tandem with afruity fermentation courtesy of an expressive yeast strain.

Style: Double IPA
Malt: American 2-Row, Flaked Oats, Wheat
Hops: Mosaic, Citra, Amarillo

Wave Jammer - 8.1%, 50 IBU

No jet ski necessary to indulge in the tropical bliss squeezed out of the hop oils in this double IPA. Enhanced by a colorful yeast strain that hones in on the Simcoe and Mosaic hops and turns them into magic. Chewy, silky body courtesy of Mecca Grade Wickiyup hard red wheat from Oregon.

Haze Hound - 5.7%, 30 IBU 

Hazy pale ale with heaps of grapefruit puree, dry hopped with Citra.

Hops: Citra, Grapefruit Puree

Mai Tai PA - 6.5%, 45 IBU

Our drier, decidedly “tropical” IPA that’s light on bitterness, but heavy on hop aroma, courtesy of 100% Mosaic hops. One whiff and you get super intense notes of passion fruit, mango, and lychee. Grain bill of just American two-row malt and a clean fermentation keep it simple and allow these hops to shine.

Malt: American 2-Row, Carafoam
Hops: Mosaic

LIGHT

Ocificap - 4.9%, 15 IBU

Inspired by the easy drinking lagers of Sinaloa, brewed in reverence to a famous beer from Mazatlan.

Style: Mexican Lager
Yeast: Augustiner
Malt: German Pilsner, Vienna, Flaked Maize
Hops: Warrior

Peninsula Pilsner - 5.2%, 30 IBU

This Pilsner is all about the delicate balance of soft European malt and floral, spicy notes from classic Noble hops used, which include Czech Saaz and German Tettnang. Our house lager strain adds a pleasant minerality, and attenuates fully for a crisp, clean and dry finish. Basically, we brewed this beer selfishly so we could have a hoppy pils to drink. Super refreshing, tons of flavor, sessionable for any occasion.

Style: German Pilsner
Yeast: Augustiner Lager
Malt: Weyermann Pilsner
Hops: Czech Saaz, Saphir

DARK & MALT FOCUSED

Anniversary Ale '18 (IV) - 15.5%, 50 IBU

The fourth variation of our viscous "Motor Oil" imperial stout was aged in Woodford Reserve Bourbon, Rye Whiskey & Jack Daniels barrels for 6-14 months before being selected for this final blend. Aromas of dark chocolate, vanilla & bourbon captivate the nose, accompanied by notes of maple, molasses, toasted malt and charred oak. Finishes with a velvety sweetness and slight warming character.

Style: Bourbon Barrel Aged Imperial Stout

Motor Oil No. 2 - 11.5%, 50 IBU

Our incredibly decadent, rich & roasty Imperial Stout treated with white chocolate in the form of raw cacao butter, and then with Ecuadorian cacao nibs, Tahitian vanilla and a generous addition of raspberry. 

Style: Imperial Stout
Yeast: California Ale
Malt: All British Pale Malt, Chocolate, Dark Crystal, Drum Roasted Crystal, Dehusked Black Malt
Other Ingredients: Cacao Butter, Ecuadorian Cacao Nibs, Tahitian Vanilla, Raspberry

FRUIT FORWARD / KETTLE SOUR

Bubble Bath - 4.8%

Designed for superlative enjoyment in your home spa. Or anywhere, really! Fall into state of complete relaxation as you soak in the bright flavors of pineapple, cherry, orange & peach. Approachable, sophisticated, sparkling & effervescent. Dip into a double fruited Berliner bubble bath today!

Style: Double Fruited Berliner Weisse
Malt: American 2-Row, Malted Wheat, Flaked Wheat
Fruit: Pineapple, Peach, Cherry, Orange

Triple Haole Punch - 10%, 15 IBU

The biggest of our Haole Punch series weighing in at 10% alcohol by volume, yet incredibly smooth and drinkable. We've added thousands of pounds of passion fruit, orange & guava to instantly transport you to the islands. Take caution with this beast of a kettle sour!

Yeast of Eden

Mo' Honey, Mo' Problems (Blend 01) - 5.9%

Brewed in May of 2016, Tyler and the Libertine crew came up from San Luis Obispo to brew one of the first Yeast of Eden batches in our new Salinas facility. Mo' Honey, Mo' Problems, the first beer fermented & aged in one of our American White Oak foeders, is a golden sour ale with a Central Coast twist. Inoculated with both of our mixed cultures, we layered 240 pounds of raw honey throughout the entire year of fermentation & aging. The blend of Wildflower honey from Mockabees Apiary in Aromas and Avocado Blossom honey from Stepladder Ranch in Cambria results in a beer with notes of floral honey, apricot, smokey molasses, and marmalade which is complemented by soft oak, bright acidity, and a rich mouth feel. I don't know what they want from us, it's like the more honey we come across, the more problems we see.

Style: Golden Sour Ale w/ Honey
Inoculant: Brettanomyces blend, House Mixed Culture, Libertine Mixed Culture  
Malt: Pilsner malt, Wheat, Aromatic malt, Spelt, Flaked Oats
Additional Info: Foeder fermented & aged w/ Wildflower & Avocado Blossom honey. 100% refermented in bottle & keg.

61 kilometers - 5.4%

The seductive sister of 38 miles, 61 Kilometers was fermented with the same blend of yeasts in our open top, French oak foeder before a gentle aging with each of our house microbes in French Oak Malbec barrels. The result is a complex blend of expressive yeast & bacteria: citrus & stone fruit yield to earthy, barnyard funk, herbal hops, and a rich, lactic acidity with a dry finish.

Style: Mixed Fermentation Saison
Inoculant: Cal Ale, Vermont, House Mixed Culture, & Sante Adairius' Mixed Culture 
Malt: German Pilsner, American 2-row, Spelt, Wheat, Flaked Barley, Flaked Oats
Additional Info: Primary open fermented in oak, mixed culture secondary in Malbec barrels, aged in barrels for 1 year.

Skeptics & Believers (Blend 02) - 5.8%

Golden sour fermented and aged in oak puncheons with Pediococcus and 12 strains of Brettanomyces. This American Sour Ale features notes of pineapple, white grape, lemon rind, and under ripe stone fruit backed with doughy malt, a bright, rich lactic acidity and crisp effervescence. In the pursuit of knowledge, we delve into the unknown of mixed fermentation; our first release is a light in the dark, guiding one from the cave & turning skeptics into believers.

Style: Golden Sour Ale
Inoculant: 12 strains of Brettanomyces, w/ Pediococcus 
Malt: British Pale, Spelt, Wheat, Flaked Barley, Flaked Oats
Additional Info: Fermented and aged in oak puncheons. 100% refermented in bottle & keg.

Saison Récolte (Blend 01) - 6.2%

Saison Récolte is a celebration of the hard workers that harvest & process the raw ingredients that make brewing possible. Brewed with 100% Mecca Grade Estate Pelton malt, fermented with a blend of saison yeasts & Brettanomyces, and conditioned on local wet Cascade hops from Akiyama Hop Yard, the resulting beer is indicative of the fall harvest season. Saison Récolte teems with notes of rose, hay, floral honey, cracker & earthy malt, with a dry effervescent finish.

Style: Wet Hop Saison
Inoculant: Saison blend & Brettanomyces blend 
Malt: Mecca Grade Pelton
Additional Info: Open fermented in oak, conditioned in stainless on local Cascade wet hops. 100% refermented in bottle & keg.

Saison Apothēca (Blend 01) - 5.6%

Born from a simple grist, and open fermented with a blend of saison yeasts, native microflora, and Brettanomyces, our warehouse saison is a modern expression of an old world style. Subtle and nuanced, yet complex and contemplative, from us to you, we present Saison Apothēca.

Style: Salinas Wild Ale / Mixed Fermentation Saison
Inoculant: Saison blend, Native Microflora (caught via coolship), Brettanomyces blend  
Malt: Mecca Grade Pelton, Unmalted Wheat
Additional Info: Open fermented in oak then conditioned in stainless. 100% refermented in bottle & keg.

Stone Hearted (Blend 01) - 5.6%

Stone Hearted began as a fusion of our two American White Oak foeders: a blend comprised of a Brett Saison & golden sour ale, both aged for 1 year. This blend was then refermented for 3 months on top of local Blenheim Apricots from B&R Farms in Watsonville, CA. The resulting beer bursts with bright sweet-tart apricot, vanilla oak, rich acidity, and long finish.

Style: Mixed Fermentation Sour Ale w/ Apricot
Inoculant: Saison blend, Native Microflora (caught via coolship), Brettanomyces blend, House Mixed Culture  
Malt: Pilsner malt, Wheat, Aromatic malt, Spelt, Flaked Oats, American 2-row, Golden Naked Oats
Additional Info: Blend of 2 foeders: 2/3 Saison w/ Brett open fermented then aged in foeder, 1/3 Golden Sour Ale fermented & aged in foeder, refermented on local Blenheim Apricots.

Oodelallie (Blend 01) - 4.7%

Oodelallie is our tart, wheat based beer aged in oak, refermented on local Olallieberries from Gizdich Ranch. Bright garnet hues encompass notes of hibiscus, rose, doughy malt, and jammy red berry with a crisp acidity & effervescence. Oodelallie, oodelallie, golly what a day!

Style: Olallieberry Sour Ale
Inoculant: Brettanomyces blend, and House Mixed Culture  
Malt: American 2-row, wheat
Additional Info: Tart wheat beer aged in oak for 1.5 years, refermented on local Olallieberries (hybird berry of a Blackberry and a Youngberry; a youngberry is a hybrid of a blackberry, raspberry, and dewberry) for 4 months.

Neon Dream (Blend 01) - 4.7%

Neon Dream is our tart, wheat based beer aged in oak, refermented on local Raspberries from Gizdich Ranch. Rosy tones lead to notes of brambly, jammy berry, doughy malt, and floral hay with a acidity & crisp effervescence.

Style: Raspberry Sour Ale
Inoculant: Brettanomyces blend, and House Mixed Culture  
Malt: American 2-row, wheat
Additional Info: Tart wheat beer aged in oak for 1.5 years, refermented on local Raspberries for 4 months.
