NEW THIS WEEK

Summer, Summer, Summer - 8.1%, Low Bitterness

Collaboration juicy double IPA with our friends from Moksa Brewing in Rocklin. We've combined our methods to bring you an assertively bangin' hop aroma & flavor in this beer, with a pillowy-soft mouthfeel and very low bitterness. Simcoe & Citra take the lead with amplified fruity esters courtesy of an expressive, English yeast strain.

Style: Juicy Double IPA
Malt: American 2-Row, Unmalted Wheat, Malted Oats, Flaked Oats
Hops: Simcoe, Citra

Contains No Juice - 8.5%, Low Bitterness

One of our original "hazy" double IPA's that's constantly tweaked to draw out as much juice-like character as possible, utilizing the interactions of hops & expressive yeast. Leading with Mosaic & Citra for a tropical onslaught in the nose & palate, bitterness is restrained with a heavenly mouthfeel from the addition of malted & flaked oats. 

Style: Juicy Double IPA
Malt: American 2-Row, Maris Otter, Flaked Oats
Hops: Citra, Mosaic

Run the Juice - 6.9%, Low Bitterness

Inspired by hip hop duo, Run the Jewels, this IPA features Citra, Ekuanot & Simcoe and is fermented with an expressive English yeast strain. It's quite delicious and your burps will be glorious.

Hops: Simcoe, Citra, Ekuanot

HOPPY

Vengeful Barbarian - 7.2%, Low Bitterness

Bright, peach heavy tones from an East Coast yeast strain fermentation and a dry hop that includes a bunch of our favorites. The result is a hop aroma and flavor chock full of ripe, juicy grapefruit and apricot jam. On the back end, we've loaded up with beer with lots of oats, so it has a soft, creamy texture to support mild hop bitterness.

Style: Yeast Driven IPA
Malt: American 2-Row, Flaked Oats
Hops: Simcoe, Citra, Mosaic, Ekuanot

Delorean Dust - 8.1%, Low Bitterness

If Doc Brown were to jump in his time machine on a quest to drink a Double IPA in 2017, this would certainly be his beer! A modern take on the ever changing IPA style. We've combined forces from two of our favorite yeasts to squeeze out as much pulpy, tropical-fruit laden ester character as possible, THEN introduced a not-so small amount of cryo powder in the dry hop to further augment an oily, luscious hop aroma and flavor. Soft, silky texture, light bitterness, high drinkability.

Style: Yeast Driven Double IPA
Malt: American 2-Row, Flaked Oats
Hops: Simcoe (Cryo), Simcoe, Citra, Azacca

Alta California Pale Ale - 5.4%, 35 IBU 

A classic American Pale Ale with traditional Northwest hops and a biscuity malt balance courtesy of floor malted British heirloom barley. Tribute to the classic APA's that kickstarted this whole hoppy beer thing several decades ago. 

Style: American Pale Ale
Malt: British Pale
Hops: Simcoe, Amarillo, Centennial

Strata - 5.6%, Moderate Bitterness

Brewed with 100% Strata hops from Oregon, this variety is extremely bright & fruity, lots of white grape, diesel & tropical notes in the body of an American Pale Ale.

Style: American Pale Ale
Malt: American 2-Row
Hops: Strata

Logical Step - 7%, Low Bitterness

Utilizing a Norwegian "Kveik" yeast strain (Kveik is a centuries-old Scandanavian farmhouse ale which varies widely in style) we brewed an IPA to see what kind of flavors and aromas are possible. It's very fruit forward but we're curious to hear your input! 

Style: Experimental IPA
Malt: American 2-Row
Hops: Mosaic, El Dorado, Cascade

Spaced Out - 8.1%, Moderate Bitterness

A rebrew of last year's collaboration Double IPA with Moonraker. Using a blended yeast strain to drive tropical aromatics and flavor compounds, we've then used both cryo and traditional pellets in the dry hop for an uber bright, fruity & dank hop character. The addition of Oregon estate heirloom barley from Mecca Grade Malting and a sizable portion of Spelt gives it a pillowy, chewy texture. 

Style: Yeast Driven DIPA
Malt: Mecca Grade Lamonta, American 2-Row, Spelt
Hops: Mosaic, Simcoe, Amarillo

Halftime Treat - 7%, Moderate Bitterness

A beer inspired by nostalgic soccer games of our youth, Halftime Treat is fermented with expressive yeast for a fruity aroma & flavor profile, and then dry hopped with Simcoe, Citra & Mosaic for a pronounced citrus character. We then augment the base beer with Valencia oranges, vanilla & a touch of lactose to transform it into an orange creamsicle of a beer. 

Style: Creamsicle-inspired IPA
Malt: American 2-Row, Admiral Maiden Voyage, Flaked Oats
Hops: Simcoe, Citra, Mosaic

Mai Tai PA - 6.5%, Moderate Bitterness

Our drier, decidedly “tropical” IPA that’s light on bitterness, but heavy on hop aroma, courtesy of 100% Mosaic hops. One whiff and you get super intense notes of passion fruit, mango, and lychee. Grain bill of just American two-row malt and a clean fermentation keep it simple and allow these hops to shine.

Style: West Coast IPA
Yeast: California Ale
Malt: American 2-Row, Carafoam
Hops: Mosaic

LIGHT

Wheats, Rhymes & Life - 5.5%, Low Bitterness

Bavarian Hefeweizen named in tribute to Phife Dawg of A Tribe Called Quest. Perfumey, clove-like and fruity aromas from an authentic yeast strain give this quenchable wheat beer extra character.

Style: Bavarian Weissbier
Malt: German Pils, German Wheat 
Hops: Warrior

Peninsula Pilsner - 5.2%, 30 IBU

This Pilsner is all about the delicate balance of soft European malt and floral, spicy notes from classic Noble hops used, which include Czech Saaz and German Tettnang. Our house lager strain adds a pleasant minerality, and attenuates fully for a crisp, clean and dry finish. Basically, we brewed this beer selfishly so we could have a hoppy pils to drink. Super refreshing, tons of flavor, sessionable for any occasion.

Style: German Pilsner
Yeast: Augustiner Lager
Malt: Weyermann Pilsner
Hops: Czech Saaz, Saphir

DARK & MALT FOCUSED

Monterey Common - 5.2%, Low Bitterness

A toasty, biscuity Vienna-style lager fermented at ambient Monterey temperature. Food friendly, crisp & refreshing, medium bodied. Give your palate a break from the hops and enjoy this malt-centric style for its simplicity. 

Style: Vienna Lager
Malt: German Pilsner, Munich, Melanoidin, Pale Chocolate
Hops: Saaz

Iron Crown Brown - 5.8%, 20 IBU 

Classic, American-style brown with strong caramel & chocolate notes, with a moderate roasty character. Hop bitterness is subtle, yet balanced; this is one of our favorite beers to drink as brewers because of it's predominantly malt-forward and easy drinking, providing the palate a nice break from hoppy beers.

Style: American Brown Ale
Yeast: California Ale
Malt: American 2-Row, Flaked Barley, Brown Malt, Caramalt, Pale Chocolate
Hops: Warrior (bittering only)

Faith No S'more - 9%, Moderate Bitterness

An Imperial Stout that's built around the delicacy of s'mores - chocolate, graham cracker & toasted marshmallow. A big, rich base beer with a gooey texture that features a touch of smoked malt for complexity.

Style: Imperial Stout
Malt: Maris Otter, Honey Malt, Oak Smoked Wheat, Roasted Barley, Chocolate Malt
Other Ingredients: Liquid Cacao, Graham Crackers, Marshmallows, Vanilla Beans

Local Shred Red - 7.2%, Pronounced Bitterness

2018 World Beer Cup gold medal winner in Double Red Ale! Classic American-style Red with a piney, citrusy hops from the Pacific Northwest and a rich, malty backbone. Very much a traditional West Coast-style red with a clean fermentation, and malt / hop balance.

Style: American Red Ale
Malt: British Pale, Carared, British Crystal Light, Patagonia Especial
Hops: Simcoe, Amarillo, Citra

Blackbeard's Delight - 8%, Moderate Bitterness

What are you gonna go with...London Gentleman? No wait....Blackbeard's Delight! Rich aromas of dark chocolate & espresso from layers of British roasted malts string the nostrils and follow through on the palate. Chewy, viscous texture and minimal bitterness in this oh so smooth dark ale.

Style: Robust Porter
Malt: Maris Otter, British Light Crystal, British Dark Crystal, Pale Chocolate, Chocolate Wheat, Carafa III, Flaked Oats
Hops: Warrior

FRUIT FORWARD / KETTLE SOUR

Trader Suede's Piña Party - 5.4%, No Bitterness

This Piña colada-inspired Kettle Sour Ale was brewed for Mikkeller SF's 5th Anniversary. Made with heaps of pineapple & toasted coconut!! 

Style: Kettle Sour Ale
Malt: American 2-Row, Flaked Oats
Fruit: Pineapple, Coconut

Super Rad! - 5%, ~3 IBU

Our wort is soured with five strains of natural, probiotic bacteria that produce pleasantly tart levels of lactic acid. Once the baseline sourness is established, we take the wort through a normal fermentation just like any other beer, and condition this particular one on pineapple puree and dry hop it with Mosaic.

Style: Tart IPA
Malt: American 2-Row, Flaked Oats
Fruit & Hops: Pineapple & Mosaic

Yeast of Eden

Mo' Honey, Mo' Problems (Blend 01) - 5.9%

Brewed in May of 2016, Tyler and the Libertine crew came up from San Luis Obispo to brew one of the first Yeast of Eden batches in our new Salinas facility. Mo' Honey, Mo' Problems, the first beer fermented & aged in one of our American White Oak foeders, is a golden sour ale with a Central Coast twist. Inoculated with both of our mixed cultures, we layered 240 pounds of raw honey throughout the entire year of fermentation & aging. The blend of Wildflower honey from Mockabees Apiary in Aromas and Avocado Blossom honey from Stepladder Ranch in Cambria results in a beer with notes of floral honey, apricot, smokey molasses, and marmalade which is complemented by soft oak, bright acidity, and a rich mouth feel. I don't know what they want from us, it's like the more honey we come across, the more problems we see.

Style: Golden Sour Ale w/ Honey
Inoculant: Brettanomyces blend, House Mixed Culture, Libertine Mixed Culture  
Malt: Pilsner malt, Wheat, Aromatic malt, Spelt, Flaked Oats
Additional Info: Foeder fermented & aged w/ Wildflower & Avocado Blossom honey. 100% refermented in bottle & keg.

61 kilometers - 5.4%

The seductive sister of 38 miles, 61 Kilometers was fermented with the same blend of yeasts in our open top, French oak foeder before a gentle aging with each of our house microbes in French Oak Malbec barrels. The result is a complex blend of expressive yeast & bacteria: citrus & stone fruit yield to earthy, barnyard funk, herbal hops, and a rich, lactic acidity with a dry finish.

Style: Mixed Fermentation Saison
Inoculant: Cal Ale, Vermont, House Mixed Culture, & Sante Adairius' Mixed Culture 
Malt: German Pilsner, American 2-row, Spelt, Wheat, Flaked Barley, Flaked Oats
Additional Info: Primary open fermented in oak, mixed culture secondary in Malbec barrels, aged in barrels for 1 year.

Skeptics & Believers (Blend 02) - 5.8%

Golden sour fermented and aged in oak puncheons with Pediococcus and 12 strains of Brettanomyces. This American Sour Ale features notes of pineapple, white grape, lemon rind, and under ripe stone fruit backed with doughy malt, a bright, rich lactic acidity and crisp effervescence. In the pursuit of knowledge, we delve into the unknown of mixed fermentation; our first release is a light in the dark, guiding one from the cave & turning skeptics into believers.

Style: Golden Sour Ale
Inoculant: 12 strains of Brettanomyces, w/ Pediococcus 
Malt: British Pale, Spelt, Wheat, Flaked Barley, Flaked Oats
Additional Info: Fermented and aged in oak puncheons. 100% refermented in bottle & keg.

Saison Récolte (Blend 01) - 6.2%

Saison Récolte is a celebration of the hard workers that harvest & process the raw ingredients that make brewing possible. Brewed with 100% Mecca Grade Estate Pelton malt, fermented with a blend of saison yeasts & Brettanomyces, and conditioned on local wet Cascade hops from Akiyama Hop Yard, the resulting beer is indicative of the fall harvest season. Saison Récolte teems with notes of rose, hay, floral honey, cracker & earthy malt, with a dry effervescent finish.

Style: Wet Hop Saison
Inoculant: Saison blend & Brettanomyces blend 
Malt: Mecca Grade Pelton
Additional Info: Open fermented in oak, conditioned in stainless on local Cascade wet hops. 100% refermented in bottle & keg.

Saison Apothēca (Blend 01) - 5.6%

Born from a simple grist, and open fermented with a blend of saison yeasts, native microflora, and Brettanomyces, our warehouse saison is a modern expression of an old world style. Subtle and nuanced, yet complex and contemplative, from us to you, we present Saison Apothēca.

Style: Salinas Wild Ale / Mixed Fermentation Saison
Inoculant: Saison blend, Native Microflora (caught via coolship), Brettanomyces blend  
Malt: Mecca Grade Pelton, Unmalted Wheat
Additional Info: Open fermented in oak then conditioned in stainless. 100% refermented in bottle & keg.

Stone Hearted (Blend 01) - 5.6%

Stone Hearted began as a fusion of our two American White Oak foeders: a blend comprised of a Brett Saison & golden sour ale, both aged for 1 year. This blend was then refermented for 3 months on top of local Blenheim Apricots from B&R Farms in Watsonville, CA. The resulting beer bursts with bright sweet-tart apricot, vanilla oak, rich acidity, and long finish.

Style: Mixed Fermentation Sour Ale w/ Apricot
Inoculant: Saison blend, Native Microflora (caught via coolship), Brettanomyces blend, House Mixed Culture  
Malt: Pilsner malt, Wheat, Aromatic malt, Spelt, Flaked Oats, American 2-row, Golden Naked Oats
Additional Info: Blend of 2 foeders: 2/3 Saison w/ Brett open fermented then aged in foeder, 1/3 Golden Sour Ale fermented & aged in foeder, refermented on local Blenheim Apricots.

Oodelallie (Blend 01) - 4.7%

Oodelallie is our tart, wheat based beer aged in oak, refermented on local Olallieberries from Gizdich Ranch. Bright garnet hues encompass notes of hibiscus, rose, doughy malt, and jammy red berry with a crisp acidity & effervescence. Oodelallie, oodelallie, golly what a day!

Style: Olallieberry Sour Ale
Inoculant: Brettanomyces blend, and House Mixed Culture  
Malt: American 2-row, wheat
Additional Info: Tart wheat beer aged in oak for 1.5 years, refermented on local Olallieberries (hybird berry of a Blackberry and a Youngberry; a youngberry is a hybrid of a blackberry, raspberry, and dewberry) for 4 months.

Neon Dream (Blend 01) - 4.7%

Neon Dream is our tart, wheat based beer aged in oak, refermented on local Raspberries from Gizdich Ranch. Rosy tones lead to notes of brambly, jammy berry, doughy malt, and floral hay with a acidity & crisp effervescence.

Style: Raspberry Sour Ale
Inoculant: Brettanomyces blend, and House Mixed Culture  
Malt: American 2-row, wheat
Additional Info: Tart wheat beer aged in oak for 1.5 years, refermented on local Raspberries for 4 months.
