Here is a delicious gluten, dairy, and refined sugar free pumpkin spice chocolate chip cookie recipe to enjoy and share! (PLUS A WAY TO GET EIGHT MORE FREE CLEAN COOKIES! Nom nom....)




 

Ingredients:
*1 cup almond flour
*1/4 cup coconut flour
*1/4 cup arrowroot flour
*1/2 cup monkfruit sweetener
*1/2 tsp. baking soda
*small pinch salt
*1 tsp. pumpkin pie spice
*1/4 cup maple syrup
*1/4 cup olive oil
*1/2 cup pumpkin puree
*1 pastured egg
*1.5 tsp. vanilla extract
*2/3 cup dark chocolate chips (I like Enjoy Life brand)

Method:
-preheat the oven to 350 (F)
-mix the dry ingredients (except for the chocolate chips)
-mix the wet ingredients
-stir in the chocolate chips
-scoop the dough by the teaspoonful (or a small ice cream scoop) onto a parchment lined cookie sheet.
-gently flatten each dough ball until a thick round disc is formed
-bake the cookies for 10-12 minutes or until done and allow to cool before serving. (Or enjoy one or two while no one is looking, ;)
