Grilled Pork and Pineapple

Grilled pineapple is an ideal sweet side for savory pork loin chops.

Ingredients

  • 4 boneless pork top loin chops, cut 3/4 inch thick (about 1 1/4 pounds total)

  • ¼ teaspoon salt

  • ¼ teaspoon ground black pepper

  • 1 pineapple, peeled and cored if desired

  • 3 tablespoon orange marmalade

  • ½ cup plain yogurt

  • ¼ cup coarsely chopped roasted lightly salted cashews

  • Fresh thyme sprigs (optional)

Directions

  1. Trim fat from pork chops. Sprinkle all sides of the chops with salt and pepper. Cut pineapple crosswise into 1/2-inch-thick slices; set aside.

  2. For a charcoal or gas grill, grill chops on the rack of a covered grill directly over medium heat for 4 minutes. Turn; add pineapple to grill. Set aside 2 tablespoons of the marmalade. Brush chops and pineapple with the remaining 1 tablespoon marmalade. Grill for 3 to 5 minutes more or until chops are slightly pink in center and juices run clear (150°F) and pineapple has light grill marks, turning pineapple once halfway through grilling time. Let chops rest for 3 minutes before serving. Cut pineapple into small wedges.

  3. Arrange pineapple and chops on serving plates. In a small bowl combine yogurt and the reserved 2 tablespoons marmalade. Spoon yogurt mixture over chops and pineapple; sprinkle with cashews. If desired, garnish with fresh thyme.
