Crockpot Southwest Chicken Stew


Want the easiest dinner recipe known to mankind?? Of course you do! This is my favorite go-to recipe when I want something super easy, no hassle, dinner-for-the-whole kind of meal: Crockpot Southwest Chicken Stew. 

The ingredients for this recipe couldn't combine any healthier ingredients and still pack a huge punch in the flavor department. This is no bland-tasting dish that you eat just to fill your tummy. No this a recipe you will crave and want to make time and time again. 

So here's the run down of some of the ingredients... 

Black beans. They are packed with fiber and protein and helps supports digestive health. They also help you feel fuller for longer. 

Salsa. Have you ever thought of salsa as healthy? This low calorie treat is a great source of lycopene for heart health and possesses anti-inflammatory properties. 

Chicken. Now I'm sure we all know the major benefits of chicken: builds strong bones and muscles. 

Ingredients
2 lbs boneless skinless chicken breast
2 cans black beans (preferably lower sodium cans) - drain & rinse
2 cans corn (I like the no salt added cans) - drain & rinse
1 jar salsa (I like medium for more flavor)
1/2 cup chopped onion
1 cup sliced mushrooms
1 package fat free (or 1/3 less fat) cream cheese

Now, are you ready for the really difficult instructions?? LOL Place all ingredients in crockpot, except cream cheese. Cook on low for 6-8 hours. Add the block of cream cheese and stir. Cook another 30 minutes. Then serve and enjoy!!
