Brewdog Brewbake

     
  • Thoroughly wash beard and tie back dread locks.
  • Get all ingredients together trying not to just eat all the cheese and chocolate and drink all the beer.
  • First up the cake, you should be making this in a 21cm microwave safe pan that you grease and line but sod that I'm doing it in a heavy pint glass or two.
  • Bosh the chopped butter and sugar into a large microwaveable bowl with the Brewdog Alice Porter trying not to drink too much. Microwave uncovered on high for about 4 minutes, maybe give it a stir after two, then leave to cool.


  • Whisk sifted flour, cocoa and bicarb into the butter then mix in the hazelnut meal (like ground almonds but hazelnuts). Whisk in the eggs and vanilla. This is when you should be putting it into a microwave safe pan, but I'm not.
  • Waz in the microwave on 75% ish power for about 10 minutes. You need to watch it or your going to over cook it and get a dry cake. If it does go dry you could always prick and pour a bit of Alice Porter into it. Leave cake to cool and all that jazz.

     
  • Now for a bit of ganache. Chop the chocolate and add to the cream, why not add a dash of Alice Porter if you have any left. Microwave for a minute to melt, stir it up and stick in the fridge stirring every now and then until spreadable.
  • Spread Ganache onto the cake and top with roasted chopped hazelnuts.

  • Now for the Hardcore Rarebit, you could if your name is Jamie do this at the same time as making the cake while your waiting for it to cool and making the Ganache.
  • Melt the butter add the flour and make a roux, cooking and stirring for a couple of minutes. Add the Hardcore IPA (ok so I'm using Tesco branded American Double IPA by Brewdog same difference as far as I am aware) a bit at a time until you have a thick and smooth sauce. Melt in the grated cheese, bosh in the mustard and Worcestershire sauce and season with black pepper.
  • Toast and butter the bread, pile on the Hardcore cheesey mix and bang back under the grill for a couple of minutes.


Now eat some cheese on toast and chocolate cake, washed down with a Punk IPA.
