Fried Cinnamon "Apples" With Whipped Cream

- 2 chayote squash
- 2 tablespoons Pure Irish Butter
- 1 teaspoon Lemon Juice (Canned or Bottled)
- 1 teaspoon cinnamon
- Stevia (to taste)
- 1/4 cup Heavy Whipping Cream (optional)
- 1/4 tsp Vanilla extract (optional)
Instructions:
- This delicious, program approved, wintery dessert will knock your socks off! Chayote squash are a rare form of squash, but are Awaken180° approved during the weight loss phase. We love this recipe, I hope you do too!
- Peel and wash the chayote (we recommend using gloves while peeling, the residue under the peel can be tough on your skin), cut lengthwise into quarters and remove the seed. Slice the squash in bite-size pieces. Place the chayote in a casserole dish with a lid. Cover and microwave on HIGH 6-7 minutes or until very tender. Drain well.
- Heat the butter over low heat in a medium skillet. When the butter has melted, stir in lemon juice, cinnamon, and about 1 dropper of liquid stevia. Add the chayote and stir to coat. Cook over low heat until the "apples" turn golden brown, stirring occasionally. Adjust the stevia and cinnamon, if needed. I think they taste the most like apples when cooled or chilled.
- To add whipped cream, combine the cream and vanilla extract (an optional drops of stevia) and mix with a mixer or immersion blender until stiff.
- Serve the Fried "apples" hot or cold with a dollop of cream on top!
