A Recipe I Absolutely Love

This isn't a recipe for everyone as it has quite a distinct flavour with the fennel, lime and honey but it's one I absolutely Love! It's dangerously moreish - hence the tiny portion.

I've been making this for about 8 years now. It isn't the most mess-free, quick or easy dish out there but one I always go back to it's that good!

It's so healthy and packed full of goodness - if it's a flavour you think you might like and something that would fit with your diet, I bid you, give it a try! Such a beautifully fresh flavour.

Enjoy ~MintTea~

Hi Mint Tea,

That looks really delicious! I've never really got on with fennel - but I think it might be interesting in that combination, so I might give it a go. :-)

Me too with the fennel, I have been sent a bulb and struggle with thinking what to do with it. I could maybe try including it like this 🙂

I have no idea how to use it other than in this dish and have only ever used the seeds 🤷🏼‍♀️

Yes, I don't mind the seeds. At present the Guinea pigs are having it. I have a veg box delivered and in lockdown they stopped you being able to have your "do not send " list so I have ended up with fennel bulbs...

Thankyou. Wasnt aware of it's vitamin C, iron and potassium content. It is bizarre as I love the aniseed flavour just not in savoury things? I will try an experiment with it.

Yeah.. It's not something I've tried before.. I love it in my toothpaste but can't imagine eating the bulb in a savoury meal either. Might be nice hidden in a soup though.

I'm glad your Guinea pigs are enjoying it - it's a good way not to let something you've been stuck with go to waste x
