Zucchini Chocolate Pudding Poke Cake

Ingredients

Cake

  • 2 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3 eggs
  • 1 cup sugar
  • 1 cup vegetable oil
  • 2 cups grated zucchini
  • 1 tablespoon vanilla

Pudding

  • 2 large egg yolks
  • 2 tablespoons cornstarch
  • 2 cups whole milk, divided
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract

Chocolate Curls

  • 1 cup dark chocolate, melted

Steps

  1. Preheat oven to 350°F, and line 2, 9-inches round cake pans with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, cinnamon, salt, baking soda and baking powder.
