Zucchini Chocolate Pudding Poke Cake

Ingredients
Cake
- 2 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 3 eggs
- 1 cup sugar
- 1 cup vegetable oil
- 2 cups grated zucchini
- 1 tablespoon vanilla
Pudding
- 2 large egg yolks
- 2 tablespoons cornstarch
- 2 cups whole milk, divided
- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
Chocolate Curls
- 1 cup dark chocolate, melted
Steps
- Preheat oven to 350°F, and line 2, 9-inches round cake pans with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, cinnamon, salt, baking soda and baking powder.
