Cheesy Beef Enchiladas
There is no better way to get beefy, cheesy goodness than with this enchilada topped with fresh avocados, cilantro, and jalapenos.

Ingredients
- 1 pound ground beef
- 1 cup onion, chopped fine
- 1 jalapeño, minced
- 1 tablespoon garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 tablespoon ground cumin
- 1 cup black beans, drained and rinsed
- 12 corn tortillas
- 4 cups mexican shredded cheese
- enchilada sauce (recipe follows)
- sliced jalapeños, for garnish
- sour cream, for serving
- sliced avocado, for serving
- chopped cilantro, for serving
Steps
- Preheat oven to 375°F.
- In a large skillet, cook ground beef until starting to brown.
