Cheesy Beef Enchiladas

There is no better way to get beefy, cheesy goodness than with this enchilada topped with fresh avocados, cilantro, and jalapenos.

Ingredients

  • 1 pound ground beef
  • 1 cup onion, chopped fine
  • 1 jalapeño, minced
  • 1 tablespoon garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 cup black beans, drained and rinsed
  • 12 corn tortillas
  • 4 cups mexican shredded cheese
  • enchilada sauce (recipe follows)
  • sliced jalapeños, for garnish
  • sour cream, for serving
  • sliced avocado, for serving
  • chopped cilantro, for serving

Steps

  1. Preheat oven to 375°F.
  2. In a large skillet, cook ground beef until starting to brown.
