Ingredients

  • 1 pound venison or elk, blended
  • 3/4 pound ground bacon
  • 1/2 cup onion
  • 1 tablespoon juniper berries
  • 1 egg, beaten
  • 1/4 cup grated parmesan cheese
  • 2 teaspoons rosemary
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup parmesan
  • 3 to 4 heirloom tomatoes, sliced
  • 1/4 cup black olives
  • 3 tablespoons basil, chopped
  • 2 teaspoons red pepper flakes

Steps

  1. Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, add Venison or Elk blended, ground bacon, egg, parmesan, rosemary and thyme finely chopped, onnion, juniper berries, salt and pepper.
