Make these zippy, refreshing cocktails for a group of friends. Famously created by Harry's Bar in Venice, Italy, it can be prepared in two batches if you have a small blender, or halve the recipe for four servings total. Since frozen peaches are used to make this drink, you can make this cocktail all year round, and garnish each glass with a thin round of lemon instead of a peach wedge; cut a small slit in each round so it will slide easily over the rim of the glass. Serve with sliced melon wrapped with thinly sliced prosciutto.

Ingredients

Fresh lemon juice

1 tbsp(s)

Sugar

1 tbsp(s)

Unsweetened frozen peaches

16 oz

Prosecco

2½ cup(s), or other sparkling wine

Peach schnapps

cup(s), or other peach-flavoured liqueur

Peach

1 small, cut into 8 thin slices

Instructions

  1. In small microwavable bowl, combine lemon juice and sugar and microwave until sugar dissolves, 30 seconds to 1 minute. Let cool to room temperature.
  2. In large blender, combine frozen peaches, Prosecco, schnapps, and sweetened lemon juice and process on High until smooth. (Let bubbles in Prosecco settle before processing.)
  3. Serving size: about 4 1⁄2 fl oz
