COOKING FOR A CAUSE I consider myself an adventurous eater and a solid home cook, but baking is not my forte. So, when the opportunity came to participate in one of Feeding South Florida’s new hands-on cooking classes, I immediately signed up for “French Patisserie.” The chance to increase my dessert repertoire was the main appeal. The fact that I would end up leaving with a plate of eclairs was just a bonus. Feeding South Florida aims to end hunger in the region by providing access to nutritious food, leading hunger and poverty advocacy efforts, and transforming lives through innovative programming and education. Proceeds from the classes—which cost $60 per person and take place in the organization’s Community Kitchen in Boynton Beach—support the nonprofit’s work. Chef Susan Taves, the organization’s director of culinary services, instructs small groups on that class’ chosen topic, ranging from patisserie to pad thai. phenomenon known as oven spring. I also gained valuable insight into sweets in general, such as water is chocolate’s No. 1 enemy as it will cause it to seize and thicken. More specific to eclairs, I learned that the secret to filling them is to wait “until they sing,” meaning until you can hear a light relief of air. Feeding South Florida hosts its cooking classes monthly. Next up are a beef (or beet) Wellington class December 12, where attendees will learn how to make this iconic dish as well as a cranberry feta dip for the holidays, and a homemade pasta class January 17.
