Shreded Beef Enchiladas
This will be the best enchiladas you're ever going to eat!

Ingredients
Shredded Beef
- 17 3/4 ounces of brisket
- 2 3/4 ounces leek
- 2 3/4 ounces of onion
- 2 cloves of garlic
- 2 bay leaves
- peppercorns
Tortillas
- 4 wheat tortillas
- 2 cups tomato sauce
- 1/2 tablespoon chopped chili
- 1/2 teaspoon liquid smoke or worcestershire sauce
- 1/2 cup grated carrots
- 1/2 cup chopped leek
- 1 cup cheddar
- 1/2 cup chopped green onion
- olive oil, salt and pepper
Steps
- In a pot with water add the brisket cut into pieces, the leek, the onion, the garlic, the bay leaf, peppercorns and a little salt.
- Cook over low heat covered for at least 2/3 hours. Let cool and with the help of a fork shred. Set aside.
