Shreded Beef Enchiladas

Ingredients

Shredded Beef

  • 17 3/4 ounces of brisket
  • 2 3/4 ounces leek
  • 2 3/4 ounces of onion
  • 2 cloves of garlic
  • 2 bay leaves
  • peppercorns

Tortillas

  • 4 wheat tortillas
  • 2 cups tomato sauce
  • 1/2 tablespoon chopped chili
  • 1/2 teaspoon liquid smoke or worcestershire sauce
  • 1/2 cup grated carrots
  • 1/2 cup chopped leek
  • 1 cup cheddar
  • 1/2 cup chopped green onion
  • olive oil, salt and pepper

Steps

  1. In a pot with water add the brisket cut into pieces, the leek, the onion, the garlic, the bay leaf, peppercorns and a little salt.
  2. Cook over low heat covered for at least 2/3 hours. Let cool and with the help of a fork shred. Set aside.
