Cheese Stuffed Potato

Ingredients

  • 2 large potatoes
  • 1/4 cup heavy cream
  • 7 ounces cream cheese
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon parsley
  • salt
  • black pepper
  • 8 3/4 ounces grated mozzarella cheese

Steps

  1. Roll the potatoes in aluminum foil and bake in a preheated oven at 180°F for approximately 40 minutes or until soft.
  2. Remove a thin slice of the potato and with the help of a spoon remove the inside of the potato. Set aside.
