Monster Cookie Candy Cake
Choc chip and candy cookie layers with peanut butter and chocolate ganache. Topped with more candy.

Ingredients
Monster Cookie
- 1 cup plain (all-purpose) flour
- 1 teaspoon bicarb soda
- 1/2 teaspoon salt
- 1/8 teaspoon unsalted butter, softened
- 1/4 cup caster sugar
- 1 cup brown sugar
- 3 tablespoons milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups dark chocolate chips
- 1 cup white chocolate chips
- 1 cup m&m's
- 1/2 cup mini marshmallows
Chocolate Ganache
- 4 cups dark chocolate
- 1 cup whipping cream
Peanut Butter Frosting
- 17 3/4 - 70 1/2 ounces unsalted butter, softened
- 17 3/4 ounces - 4 cups icing (confectioners’) sugar
- 2-4 teaspoons vanilla extract or vanilla bean paste
- 1/2 cup peanut butter
Decorations
- 8 mini peanut butter cups
- 1/2 cup mini marshmallows
Steps
- Combine the chocolate and cream in a large, microwave-safe bowl. Microwave on high, for 30 seconds at a time, mixing between each interval until smooth.
- Once fully melted, cover with plastic wrap and leave to set at room temperature.
