We Can't Remember Life Before Fried Bread

Your morning toast is good. Fried bread is better.

You know how when you make a grilled cheese, the bread gets all glistening and golden and crispy and delicious? Newsflash: You don't need to make a grilled cheese to get bread like that.

You just need to start frying your bread instead of toasting it.

I started doing it recently, almost as an afterthought. On most mornings, I fry up some eggs in olive oil for breakfast. There's always oil left in the pan and I figured, why not throw a slice of nice, crusty bread in there while the pan is still over the flame?

Boom.

A couple minutes later, after flattening the bread with a spatula, I had something essentially the same as toast but far more satisfying—crispy on the outside, tender within, and infused with flavor.

Of course, you don't need eggs to make fry bread. BA food director Carla Lalli Music throws a few slices in the pan to serve with her homemade tomato soup. I’ve paired fry bread with a bean stew situation that I make in the winter months.

And while fry bread might seem indulgent, it's no less healthy than toast. It's the same thing—bread plus butter or olive oil. Only better.
