We finally made a “What We Eat In A Day” video for you! This has been one of our most requested videos since we started our YouTube Channel. Brian keeps saying that what we eat in a day is boring, but I know it can be helpful for people to see it all laid out 🙂 We really do eat the same stuff we’ve been sharing on our recipe videos, so you’ll see a few familiar things pop up!

For those of you who might not know, we follow a whole food, plant-based diet. We have been following our own version of the “6 week plan for weight loss” from the book Eat To Live for the majority of our weight loss journey. We still try to stick to those guidelines for the most part – with a few adaptations along the way. Check out this video for more information on our weight loss journey.

Breakfast

We usually eat some variation of one of the four Super Simple Breakfast Ideas that we shared a while back, so be sure to check out that video for more information and ideas!

Lately I have been eating a mix of frozen blueberries, raspberries, pineapple and mango. I pack the frozen fruit into a four cup Pyrex storage container in the morning before I head to work, and it is usually thawed out a bit by the time I get there. Once I am at work, I slice up a fresh banana over the frozen fruit and add about a tablespoon of nut butter.

Brian prefers to start his day with some grains, so he toasted up two slices of Ezekiel Cinnamon Raisin Bread and topped it with his “banana butter.”

Lunch

We eat a lot of the same things every day, but our lunch “entrée” is where we like to switch it up. Today we packed up some of our homemade vegan chili! We just posted the recipe here and the video for that is coming soon. Usually I bring about two cups for myself and give Brian about three cups.

We’ve also been taking some raw veggies with a bit of our super smoky hummus. This adds some extra bulk to our lunches to help us stay full until dinner time.

Brian usually brings a few pieces of fresh fruit with him to work – today it was a peach and an apple. He also brings a two cup container of frozen fruit (usually blueberries, cherries, pineapple & mango).

Since I eat a lot of fruit for breakfast, I usually just bring one extra piece of fresh fruit as a “dessert” for my lunch at work. Today I brought a really delicious Pink Lady apple.

Dinner

For those of you who are wondering (after watching our salad prep video)… YES, we really do eat a giant salad for dinner almost every single night 😂

We start out by chopping up some lettuce using our super cool salad chopper & bowl. Yes, we know that the lettuce was already chopped before we chopped it up even more, but when eating such a large salad, we find it really makes a difference! It it so much easier to mix it up and ensure you get a variety in each bite of your salad.

Then we lay out all of our toppings and each pick what we want to include in our salads. We do switch up the toppings from time to time, but for the most part what you see in the video is what we like to use on a regular basis. We each add in our own spices, etc. but we both use some of our super smoky hummus to act as a dressing.

Dessert

Sweets are my absolute favorite, so I love finishing off every day with some kind of dessert. Usually it is fruit or some of my chocolate nice cream.

Today we had a special treat! I decided to make a batch of The Jaroudi Family’s Raspberry Peach Popsicles. They turned out amazing! Check out Brittany Jaroudi on YouTube if you haven’t already – she is SUCH a genuine, amazing person and she makes a TON of delicious whole food, plant-based recipes.

    I love your recipes and videos so much. You are both so inspiring! I bought the OXO salad chopper and bowl. Just used it for the first time, as I love the idea of finely chopped salad. I did onion pieces, red cabbage, celery and romaine lettuce. Chopped all roughly before adding to bowl. It took forever and a lot of work to get the vegetables chopped small. I’m 72 and not as strong as I once was. What is the secret to using this bowl and cutter? Maybe you could do a demo about using it in a video, or if you already have, tell me which one. Thanks ever so much!!

  6. Were those dates you were putting in toward the end of your salad video? The things in the small bowls were hard to tell what they were. By the way, someone brought your Brian’s chili to my plant based potluck on Sunday and told me about you. Thanks for what you do. I enjoyed your videos.

    Love your videos! I have to wonder how you stay satiated with extremely low starch? I am into McDougall and he recommends starch at every meal and many are losing weight by adding starch like potatoes or rice to meals. I would be super hungry if I didn’t add a bit more starch.

    I am reading “Eat to Live” – he mentions limiting the grains/starches if you want to lose weight. did you do that? how did you keep track?

    • We usually try to stick to 1 cup total of cooked grains or starchy veggies per day. We normally pick one meal to have our grains or starchy vegetables with. Usually for us it is breakfast (oats for me and Ezekiel bread for Brian). Because of this, we don’t end up eating a lot of starchy vegetables like potatoes.

    How many cups of chili cooked do you eat for lunch? It was hard to tell from the foto. If I don’t measure quantity I sometimes get carried away😉. This question refers to your what I eat in a day to lose weight. Also, Jessica ,do you make your breakfast oatmeal with almond milk or water?

    Any tips of trying to like raw veggies? Have you guys always liked raw carrots, cauliflower, and broccoli?

    Love the look of your salads!!!, do you have a ball park amount of greens that you use when you make them? Sometimes i start adding too many ingredients, and it ends up being more than i can eat.
