Avocado Toast Millionaire

Given the choice between avocado toast and home ownership, you can probably guess which one is more closely aligned to my goals. While it would certainly be nice to set down roots, or at least stop throwing money away on monthly rent, there’s nothing that could convince me to give up this brunch staple. What can I say? I’ve got expensive tastes.

Luckily, avocados often go on sale here for absurdly low prices. When they hit 29 cents apiece, you’d better believe I’m stocking up. Don’t try to tell me that there’s a limit to “stocking” avocados, those highly perishable fruits that go from ripe to rotten in a minute. Powerless in the face of a bargain, I’ll inevitably end up lining my kitchen counters with the surplus, calculating how many lavish toasts I can fit in before they all rot in place.

What To Do with Too Many Avocados

Even if you’re not dealing with such excess, this idea is still a great trick to keep in your back pocket for those avocados that simply get overripe, aren’t the most beautiful, or are otherwise unfit for slicing. Transforming it into cool, refreshing Avocado Toast Soup makes it a respectable entree for any meal. The base is an adaptation of my garlic bread soup from Real Food, Really Fast, enriched with gorgeous green avocados for a perfectly hipster twist. Crunchy croutons lavish the top to give it a satisfying crunch, just like the classic open-faced sandwich.

Avocado Toast Soup

Transform overripe avocados into a luscious chilled soup, inspired by avocado toast! Perfect for brunch or a light lunch, it's a taste of luxury on a budget.

Ingredients

  • 3 Tablespoons Olive Oil, Divided
  • 6 Ounces (About 6 Slices) Sourdough or French Bread, Cut Into 1/2-Inch Cubes and Divided
  • 1 Medium Yellow Onion, Diced
  • 2 Cloves Garlic, Minced
  • 3 - 5 Cups Vegetable Stock
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Ground Black Pepper or Crushed Red Pepper Flakes
  • 3 Large Avocados, Divided
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Thinly Sliced Chives or Scallions

Instructions

  1. Take 2 ounces of the cubed bread and toss it with 1 tablespoon of oil, to coat. Spread it out on an air fryer sheet and air fry at 370 for 3 - 5 minutes, until toasted. Alternately, you could use a toaster oven preheated to 400 degrees and bake for 5 - 8 minutes.

  2. Meanwhile, set a medium saucepan over medium heat. Add the remaining oil along with the onion and garlic, stirring frequently, until golden brown; about 3 - 4 minutes. Add the remaining bread, cooking until the bread is saturated in garlicky oil. Pour in 3 cups of stock, salt, and pepper, covering the pot and bringing the mixture up to a boil. Reduce the heat to medium-low and simmer for 5 - 10 minutes, until the bread is completely falling apart.

  3. Turn off the heat and let cool to room temperature before moving into the fridge to chill. Let rest for 1 - 2 hours, until completely cool.

  4. Transfer to a blender along with 2 of the avocados and lemon juice. Puree until silky smooth, slowly drizzling in additional stock until it reaches your desired consistency. Ladle into bowls and garnish with chives or scallions, the remaining avocado, and toasted bread.

  2. I’ll definitely have to check out your other avocado recipes as well. Our grandson at a year and half (almost) loves “cados.” The only regret I have is that by buying them I’m most likely supporting the Mexican cartels. Sigh.
